Summary
Eighteen agricultural family run companies that breed Italian Simmental (PRI), a dual breed cattle, integrated with the slaughterhouse and the meat processing center Gattel Franco and agricultural cooperatives La Rossa Pezzata of Friuli Venezia Giulia and San Quirino meats cooperatives and in collaboration with the AAFVG, ANAPRI and the Department of Agricultural, Food, Environmental and Animal Sciences of the University of Udine (UNIUD), have formed a pole of the Friulian meat Pezzata Rossa, to increase the regional production of young bulls, heifers and cows for reform and transform them into innovative meat products to sell in the network of farm shops and also exploring new marketing channels. To achieve these goals, they will collaborate with University of Udine (UNIUD) to applicate an innovative project aimed at identifying good sustainable breeding practices, dimensioning the potential supply chain and market demand for the meat product basket, for the most representative of which the composition will be experimentally formulated and will be evaluated the optimal packaging method. A widespread dissemination of the results will be carried out to increase the knowledge and the recognition of the products of the supply chain addressed to the regional and national markets.
