Educational visits for students
Recently, 3 educational visits were organized for the students of the Master's Degree in Animal Breeding and Welfare, the integrated course "Animal Products Sectors" and the "Animal Breeding Engineering" degree course.
13th December 2017: visit to the COATI industrial cold cut meat factory www.salumificiocoati.it in Arbizzano Negrar (VR) and the zootechnical company "LA TORRE" in Isola della Scala (VR), specialized in the production of fattening cattle. A wide illustration of 2 biogas plants and 1 composting plant connected to the animal husbandry company was added to the guided visit of these two impressive production facilities.
These company visits have been realized thanks to prof. Nadia Innocente, Edi Piasentier, Francesco da Borso and Luca Miceli in order to give a concrete aspect to the theoretical aspects treated during the lessons at the University.
10 January 2018: educational visit to the DOK DALL'AVA row ham factory www.dokdallava.com in San Daniele del Friuli. The students could observe the production reality of the supply chain that leads from the fresh pork thigh to the DOP-branded San Daniele row cured ham. The company also produces other gastronomic specialties: PATADOK (from thighs of Spanish pigs of Pata Negra breed), HUNDOK (from thighs of Mangalica pigs breed in Hungary), NEBRODOK (from thighs of Sicilian black pigs of the Nebrodi mountains).
Different row hams but united by the production technique, which consists in the gradual dehydration of fresh meat until the obtaining of products with well-caracterized sensory profiles, to satisfy the palates of the most demanding consumers.
Organizers: Prof. Piasentier and dr. Saida Favotto
