Insects on the plate: from prejudice to acceptance

The study on the acceptance of edible insects by consumers was coordinated by Dr. Simone Mancini, a researcher at the Department of Veterinary Sciences of the University of Pisa, who highlighted that information can be a good strategy to reduce disgust towards edible insects.

Entomophagy seems to have a certain echo both in consideration that EFSA, the European Food Safety Authority, has just authorized the marketing of Tenebrio molitor (the flour moth) as a food, and because the next July the summer school "Insects as Feed and Food" dedicated to the topic will be activated.
